Baked Fruit Slices

Indian Trails Library

Indian Trails Library

Recipe makes 2 fruit slices.

Ingredients:
1 package dry yeast
1/4 cup warm water
1 teaspoon sugar
1/2 teaspoon salt
3/4 cup butter or margarine
2 egg yolks
confectioners' sugar

For Filling:
1 can Solo brand filling OR use 1/2 can of two kinds. My favorite is apricot & almond. Prune is good too.

Directions:
Sprinkle yeast over 1/2 cup warm water and add 1 teaspoon sugar. Let stand until yeast is softened. Sift together flour and salt. Cut in butter until mixture resembles coarse meal. Blend in egg yolks and softened yeast. Mix until a smooth ball is formed. Divide dough in half. Roll out each half on a lightly floured surface into a 9 x 13 rectangle. Spread filling (1/2 can) on rectangle and roll as for jelly roll. Repeat with other 1/2 of dough. Spread with remainder of filling or use another flavor.

Place in greased cookie sheet and make a 1/2 inch cut lengthwise down the center of each fruit slice. Bake (no rising) at 375º for 22 minutes. Cool a bit then sprinkle confectioner's sugar on top. Let cool completely then slice and serve. Easy dough to work with. Also excellent to give as a hostess gift or for a bake sale.
